With the New Year already started, have you decided on any new goals? In all honesty, I’m not one to set new goals up just at the beginning of the year, I like to do them more frequently. I also like to do small, more realistic goals that can turn into one big large step at the end of it all.
If you haven’t decided on any goals yet, let me suggest one! Why not start adding a little more fruits and/or vegetables to every meal?! It may sound daunting, but in all honesty, it doesn’t have to be. Often I find clients end up over-complicating things. Let’s aim for simple. One of the many things that I enjoy about grocery shopping is finding new products. When I saw that they are now making pre-cut and peeled butternut squash in the frozen section, it blew my mind! Have you ever tried to cut and peel a butternut squash? It takes time and some good knife skills. But now you can spend a few extra $ and have it done for you! I find that there still is a stigma around frozen vegetables. That maybe they aren’t good/nutritious enough compared to fresh vegetables. Well, I’m here to tell you that they are! They can also be a convenient and quick way to add more vegetables to your meals! And won’t go bad as quickly either! What’s your go-to frozen vegetable that you always have on hand? Comment below! I always keep green peas on hand and pop them into everything from soups, rice, stir fries and pasta dishes! Yum!

I'm just starting to get vegetables back into my everyday diet. I guess you could say my oldest child who will be 3 in a couple of months hasn't really had to endure the vegetables during dinner times. 😬 When I do make vegetables it is usually the Frozen variety mixed veggies that I would either throw into shepherd's pie or occasionally have fresh broccoli florets cut on the side. Since the birth of my daughter we have started picking up eating more vegetables more so on the Fresh side which includes slice tomatoes and cucumbers!
