Using up old vegetables!

To continue on a similar note from my post last week about using #celeryleaves to flavour broths, soups, salads and when poaching meat, I wanted to give you another option for you if you didn’t want to waste your old #vegetables.

Make a #potage! In other words, I guess you could call it an everything but the kitchen sink #soup or #vegetablesoup. I grew up in Quebec and m...y mom had learned from her mother to never waste any part of the vegetable or any vegetables for that matter. Therefore, whenever she would have some vegetables in her fridge that were starting to look less than stellar, she would make a soup out of it for the week. Basically, any part of the vegetable that hasn’t become moldy or rotten would be cut up, boiled together and then pureed. A little salt and little pepper and voila! By adding this practice of making a soup into your regular routine when you are cleaning out your fridge, you don’t waste the vegetables or your money!
